The 4th of July is coming up and I want to share a delicious low carb, gluten free menu with you. Going low carb and gluten free requires no sacrifice in flavor or yumminess. This is a great, festive meal that anyone will enjoy, even if they’re used to eating gluten and sugar. Since this food is healthful, everyone will feel good the next day even if they’ve overeaten!
I like to enjoy my guests at the party instead of feeling rushed and preoccupied in the kitchen. Having as many things as possible cooked ahead of time makes this possible. Many of these dishes are make-ahead and I’ve included a game plan below to help you plan a fun and relaxing celebration.
The Menu:

3-4 days ahead: Make the Barbecue Sauce, cover and refrigerate.
2 days ahead: Make the Hummus, cover and refrigerate.
1 day ahead: Make the cupcakes and toast the coconut topping. Cover and refrigerate. (Don’t make the frosting yet). Make the brownies and cover and freeze them.
Day of the party – morning: Make the coleslaw, cupcake frosting, and guacamole. Cover and refrigerate.
Day of the party – 1-2 hours before: Frost the cupcakes and sprinkle with toasted coconut, refrigerate uncovered.
Day of the party – before serving: Barbecue the meat.
